Title Prospecting Umami Peptides with Antihypertensive activity in Avocado industry by-products using peptidomics and virtual screening (PUPAxAvo)
Description

This project aims to valorize industrial avocado byproducts (peel, seeds, and defatted paste) by transforming waste into sources of multifunctional peptides. The primary objective is to identify umami-tasting sequences that also exhibit antihypertensive activity via ACE inhibition. The methodology integrates peptidomics and advanced bioinformatics, using machine learning for the virtual screening of protein hydrolysates. Candidates will be selected based on bioactivity, solubility, stability, and safety—ensuring the absence of toxicity and allergens. Furthermore, molecular docking with T1R1/T1R3 taste receptors will be employed to understand flavor interaction mechanisms. Finally, the bioavailability and drug-likeness of the top candidates will be evaluated in silico. This innovative approach accelerates the discovery of ingredients that improve both palatability and health, promoting sustainability and the circular bioeconomy in the avocado industry.
